Guacamole might be the easiest thing to make and it also might be the quintessential signature recipe for every party, cookout, tailgate, happy hour, yeah you name it…..people love to eat it!  And that would also include meeeee.  We eat it all the time at our house so you can imagine my shock and dismay that I still hadn’t shared my go-to recipe with you!

It’s certainly no secret that I love throwing parties and this guac has been a favorite for many years.  I always add a pinch of cayenne to mine since I love a nice kick along with chopped jalapenos, but make yours according to how much heat you like, everyone is different!  Oh and don’t you just hate it when your guacamole starts turning brown before you even have the chance to serve it??  A little trick I learned is to keep the avocado pits in the bowl while you refrigerate it – this stops the oxidation process and keeps your guac nice and green!

Serve this up with some tortilla chips, pita bread or even fresh veggies.  We also eat our guac over shredded salsa chicken, recipe to come and I promise your mind will be blown.  Either way, I think you’ll enjoy this even if you are iffy on avocados – I’m determined to convert you some how!

RECIPE

Chunky Guacamole

Yield: 8 servings 1x

Ingredients

  • 3 ripe avocados, slightly mashed
  • 2 limes, juiced
  • 1 tsp. sea salt
  • 2 roma tomatoes, chopped
  • 1/2 red onion, chopped
  • 1 clove garlic, minced
  • 1/2 tsp. lime zest
  • 2 jalapenos, seeded and chopped
  • Pinch of cayenne pepper
  • Handful of fresh cilantro, chopped

Instructions

  1. In a medium bowl, mash avocados with lime juice and sea salt until just combined, but still a bit chunky.
  2. Add in tomatoes, red onion, garlic, lime zest, jalapenos, cayenne and cilantro, mixing well. Enjoy!
