Ok so I know this is a day behind, but….EMILY PICKED JEF!!

My apologies to those who are completely clueless, but I’m just a little obsessed with The Bachelorette.  Emily (in my opinion) is the sweetest, most gorgeous and down to earth girl in Bachelorette history…I was fan ever since Brad’s season.  Sure I was upset she didn’t pick Sean, but she handled every situation with grace and class, even when it was undeserved *cough cough Kalon*

I seriously had the utmost respect for her when she chose to only introduce Jef to her daughter Ricki and went ahead and sent Arie home early, rather than dragging out the date.  She was genuinely crushed knowing that she would be breaking his heart, and it made me love her even more!

Oh and isn’t Jef just the cutest???
I really love them together.

And yes, this would be an egg white omelet with spinach and tomatoes.  Uber healthy, totally delicious and probably the easiest thing you’ll ever make in your kitchen.  For reals.  I’m doing by best to stay on the clean eating track, and like I said before, I’m really loving it!  This is something I make almost every morning and no I don’t add cheese, but feel free to throw some in yours if you feel so inclined.Best part is, this entire omelet is only 1 WW point!

High in protein, low in carbs and completely fat-free.  An easy clean breakfast that is filling, delicious and perfect to start your morning off with!

Spinach and Egg White Omelet

Start your morning with this easy Spinach and Egg White Omelet that is healthy, delicious and easily made with just 5 simple ingredients!

Cook Time: 20 minutes
Total Time: 25 minutes
Servings: 1

Ingredients 

  • 3 egg whites
  • Handful of spinach, about 1/2 cup
  • 1/2 cup onion
  • 4 or 5 grape tomatoes
  • Salt and pepper, to taste

Instructions 

  • Preheat the oven to 400 degrees F. Spray a medium skillet with cooking spray and saute your chopped onion for 3 to 4 minutes, until translucent. Add your spinach and saute until just wilted.
  • Place spinach-onion mixture in a small glass dish (or you can use a small skillet) and crack 3 egg whites over top. Season with a bit of salt and pepper, add sliced tomatoes and bake in oven for 17 minutes. Serve with fresh fruit and enjoy!

    I just made it as a post workout lunch. It was very good ! I used 6 egg whites in a small cast iron pan….I added some finely chopped hot peppers. It was perfectly done in 20 mins at 350F. I meant to take a picture but ….I ate it😁👍(next time.)

    Delicious omelet! Definitely does NOT need to be baked for 17 minutes, however. 12 minutes is plenty.

    I have been making these omelets for breakfast/brunch. They are so tasty! I’ve also tried asparagus and onion and gourmet mushroom and onions. All the combinations are so yummy! Thanks for sharing!
