- Prep the zucchini. Finely grate your zucchini and measure out 1 cup. Place the zucchini in a clean kitchen towel or several layers of paper towels and squeeze firmly to remove as much excess moisture as possible.
- Mix the dry ingredients. In a medium bowl, whisk together the whole wheat pastry flour, all-purpose flour, baking soda, baking powder, pumpkin pie spice and salt.
- Mix the wet ingredients. In a separate large bowl, whisk together the eggs, pumpkin puree, maple syrup, melted coconut oil, milk and vanilla until smooth and combined.

Measure 1 cup of grated zucchini first, then squeeze it firmly in a clean kitchen towel until very little liquid comes out.
- Don’t overmix the batter – stir just until the flour is incorporated. Overmixing can develop too much gluten and make your bread dense instead of soft and fluffy.
- Use pumpkin puree, not pumpkin pie filling – look for 100% pure pumpkin puree. Pumpkin pie filling already contains sugar and other ingredients.
- Measure the flour correctly – spoon the flour into your measuring cup and level it off rather than scooping directly from the bag, which can pack in too much flour.

- Chocolate chips – use semi-sweet, dark or sugar-free chocolate chips, or leave them out altogether.
- Add some crunch – fold in chopped walnuts or pecans along with or in place of the chocolate chips.

- Preheat oven. Preheat oven to 350°F and lightly grease a 9×5-inch loaf pan or line with parchment paper.

It was a fun and simple recipe; I used Organic Sprouted Spelt flour, Org Coconut oil, Org Coconut milk, Org Greek Yogurt AND Org Pumpkin for my substitutes…did NOT opt for the choc chips. Instead, I added chopped Org walnuts AND Org Frozen Blueberries.
Made 1 large loaf pan and 2 mini loaves!

Regular whole wheat flour can be used, but the bread won’t be as cake-like. You can also substitute the pastry flour with all purpose flour 🙂
