I hope everyone rang in the New Year with lots of love, laughs and glitz! Lemme tell you, we sure did. We went out with Chris, his brother and wifey (who is fabulous by the way!) and lots of other friends, it was certainly a night to remember. I of course donned my new sparkly black cocktail dress and danced the night away with confetti and horns. But more of that later, I have a really yummy recipe to share!
This cranberry oat and honey bread is seriously the chupacabra of healthy bread recipes. Ever heard that term? Well Patti Stanger (you know, the Millionaire Matchmaker..duh) uses it when she finds the “perfect” man and well I use it for the perfect recipe.
Oh and notice anything different? I got to play with my new 50 mm lens and I absolutely LOVE it!! It makes taking pictures so much more fun and it really never takes a bad photo. I had so many great ones to choose from!
This bread contains no sugar, no butter and very little oil. The honey is used as a sweetener as well as a touch of cinnamon and nutmeg for some added spice. It was deeeelicioooous! Just take my word for it. You can use fresh cranberries or dried, I used dried only because I had some on hand but I think fresh would taste even better. This is a great breakfast bread and you probably already have everything on hand to make this.
The only change I would make to this would be to add a bit of yogurt to make it more moist. It may also be a perfect substitute instead of the oil, but either way this still tastes delish! Mmm and nothing smells better than fresh homemade bread in your house.
That bread looks just amazing! And such gorgeous pictures — I meant of the bread, but you girls look great in your glitz. Great way to ring in the new year. Happy New Year, Kelly!
The bread looks fabulous! I’m always looking for easy, healthy things to have on hand for breakfast and this perfectly fits the bill. Happy 2012 Kelly!

Oats and cranberries do make for a delicious and rustic bread. Your picture here looks amazing. Glad you enjoyed ringing in the New year, looking forward to your posts in 2012!
These are some gorgeous pictures! I wish I had your camera 🙂 This bread looks soo good! I love healthy breads, desserts, the whole shebang. And your New Years looked like a blast, I love your sequins dress too 🙂
Look at you!! Kelly, your photos have come SO far in the past year. You should be so proud, you are a real life food photographer! I’m so impressed. AND I’m in love with this bread 🙂
I am saving this – wondering if I can make it vegan with rice or soy milk – for a friend. It does take the sting out of dieting! Happy 2012 – it looks like you already know how to embrace the New Year!
I love your New Year’s dress…and this bread! I have loved cranberry everything this holiday season and am so glad to see it’s not going away quite yet 🙂 Happy 2012!
Glad you had such a good time. I got sick and ended up in bed by 8pm. Lame, I know. This bread looks fantastic! And the photos are gorgeous. Cannot wait to see more of what you can do with the new lens.
This looks delicious, Kelly! I’m glad you had a fun New Year and the pictures are fabulous! I’m glad you’re enjoying your new camera…I’m still on schedule for a new on in April! Can’t wait…
Love this post! First, the bread looks amazing, and I must try it! Second, you look like such a fun person to be around! Thanks for sharing your pictures, they are really cute! Happy New Year Kelly!
This sounds perfect for a post-holiday snack! And your new years sounds way better than mine which was spent at home sick on the couch. L O V E that dress!
Your camera is AMAZING!!! This recipe looks delish, I have everything except the berries on hand and I look forward to running out so I can make this bread this weekend. You are the BEST!!
This looks great! Just perfect for the fresh cranberries I happen to have in the fridge. I’m wondering, can you use old fashioned oats, or does it have to be quick cooking? When I add oats to my other bread recipes I soak them in just a bit of water so they are moist, and don’t dry out the bread. Maybe I’ll try it. BTW… I LOVE my 50 mm too! It’s my fav for sure and I use it 99 percent of the time. Happy New year!
I just found your blog and I am so excited that I did. I love your blog. These recipes are to die for. Can’t wait to continue reading. Also glad to “meet” a fellow wine lover- especially moscato.
your pictures are incredible. they’re making me drool at my desk. i’m totally sharing this blog w/ my aunt who is currently doing weight watchers. she’ll love it! 🙂
I adore cranberries and now that they are on sale, I’m stocking up. I am one of those weird people that actually makes Thanksgiving dinners outside of Thanksgiving.
I’ll have to try this cranberry recipe because it looks delish. I too, just got a 50mm and it makes ALL of the difference. I’m very slowly learning how to take photos that make you actually want to eat the food – novel idea – I know! Found you from SRC.
Yum! Made this the other day…hard to stay away from. I love that this recipe does not use granulated sugar. The honey gives it the same sweetness but without the guilt!! Love your recipes!
This looked so yum I started baking it within 5 minutes of reading the recipe! But is was a bit of a disaster – a tasty disaster you could say. It took absolutely aaages to cook, i’d say 1hr, and even then some parts weren’t fully baked through and other parts were burned. I’m going to blame either my oven or my baking tin – definitely not my baking skills 🙂 Love your blog 🙂
Ok Kelly, I made it (with a few tweaks). I really liked the fresh cranberry taste and mine wasn’t dry at all. If you want to see my version, it’s here – although I upped the calories I’m sure!!
OK.. HELLO! This is what I’m talkin’ about! I am so making this tomorrow!!! I am so inspired by you. BTW, I’ve been doing so much research on cameras. I cannot decide if I want to get a Nikon or a Canon. I have my eye on the Canon EOS Rebel t3i. My big purchase will be this weekend. I see that you use a Nikon and your photos look immaculate! Ahh, decisions, decisions.. Anyway – I am so excited about getting my camera and taking photos of the food I make as I just recently started a blog last month. The Pinterest Housewife! 🙂 I’m still learning. I haven’t taken any Web Design classes in years!! Anyway, your blog is fabulous! I LOVE IT!
I just read through many many comments about how lovely the bread looks and how lovely your photography is. But, not one comment by anyone who tried the bread, no comment on how it came out. Disappointing.
I was also disappointed that there were no/few comments from people who had actually made the bread – a fact I did not discover until it was already in the oven. I baked it for the recommended time and it was completely gooey in the middle and I had to put it back in for almost 20 minutes, resulting in a burnt top before the rest was cooked. The flavour is good, however the bread was too chewy for my liking. I wouldn’t make it again.
I’m so sorry this bread didn’t turn out for you! It sounds like the temp may have been too high or too hot (often times ovens can be different). Next time you could try turning down the heat so that it cooks in the middle without overcooking the top 🙂
I”m a teenager and trying to start eating healthy young. Saw this recipe and just had to try it! substituted a few little things, but it still tastes amazing! Thanks!!!
Did anyone actually make this??? Please don’t waste everyone’s time saying how great it looks. We can all see that and frankly who cares what you think about a picture. I need to know if it tastes good!
I made this bread, I took it out of the oven after 55 mins. Unfortunately, it still was not done when we cut into it. My oven usually takes less time than most recipes call for so I started checking this at 35 min. No idea what happened, very disappointed
