This Skinny Pumpkin Spice Mug Cake is easy to make, less than 200 calories per serving and only takes 1 minute in the microwave for moist, delicious cake!
Alright guys….this is serious. For real, I’m talking HUGE.
Did you know that it IS possible to enjoy cake for under 200 calories AND you can make this said cake in only one minute? **drops mic** Seriously I LOVE mug cakes! Do you ever have those nights when you’re craving something sweet, but either feel like a) you don’t want the hassle of all that baking or b) you don’t have anything in the house? Yeah…..all. the. time. Well mug cakes literally solve both of those problems. Using basic ingredients you probably already have sitting in your pantry, you simply mix everything together in a bowl, throw it all in your coffee cup and microwave for 1 minute and 15 seconds (to be exact). BOOM – life legit changed.
And YES it really does taste like fluffy, moist, deeeeelicious cake! The best part is there are so many different flavor combinations you can make too (one of my go-to flavors is vanilla bean….mmmmm), but since Fall is officially upon us, I thought a pumpkin spice cake would be appropriate. Now don’t get me wrong – I absolutely love this for dessert, but another way I like to enjoy this is by adding a little protein powder (my FAVORITE is Tone It Up’s Perfect Fit!) and making a quick yummy breakfast! I mean who doesn’t love cake before work?? Oh and if I’m running late, I just pre-mix everything at home and then throw it in the microwave at my office to eat at my desk. Such a huge time saver and duhh it tastes great too!
Ok now back to dessert. Seriously am I not the only one who feels like I have nothing in my pantry when it comes time to wanting a little after dinner dessert?? I usually only ever buy at the grocery store what I know I’ll need for the week and of course that does not include cake, cookies or really anything in the sweet category because if it’s there….I’ll clearly eat it. Well since this cake is just a single serving AND under 200 calories, I don’t feel so guilty! I also must admit that I LOVE throwing a dollop of vanilla ice cream on top. Oh man guys is this goooooood! The ice cream just melts all the way down inside the mug making everything super creamy.

And don’t be weirded out by microwavable cake – it really DOES taste amazing! - 4 Tbsp white whole wheat flour
- ½ tsp. baking powder
- ¼ tsp. cinnamon
- ¼ tsp. pumpkin pie spice
- Pinch of nutmeg
- 1 Tbsp maple syrup (or 1 Tbsp brown sugar)
- 2 tsp. pumpkin puree
- 2 Tbsp almond milk (or milk of your choice)
- 1½ tsp. unsweetened apple sauce
- ¼ tsp. vanilla extract
- In a small bowl, whisk together dry ingredients until completely combined then add in maple syrup, pumpkin puree, milk, apple sauce and vanilla extract. Whisk together until all clumps are gone. (If using brown sugar instead of maple syrup, add the sugar in with the dry ingredients)
- Spoon mixture into a microwavable safe coffee mug and microwave on high for 1 minute and 15 seconds.
- Allow cake to cool a bit then enjoy!
