Stop everything you’re doing and go make this recipe.  Seriously!  These No Bake Dark Chocolate Almond Butter Bars are literally EVERYTHING, made with creamy almond butter, rich dark chocolate chips, ground flaxseed meal for some added fiber and sweet maple syrup to naturally sweeten these right up.  Sprinkle a little flaky sea salt on top and enjoy right out of the fridge to get that extra ‘snap’ from the chilled chocolate OR let them sit at room temperature to enjoy a rich fudgy almond bar!

INGREDIENTS YOU’LL NEED

  • Almond butter – I chose to use creamy almond butter, but you could also opt for crunchy if you like bits of almond in them!  Really any nut butter would work in this recipe, I also personally LOVE making these with peanut butter
  • Almond flour – the flour helps to give these bars some form rather than being too gooey once they start to thaw and adds even more delicious nutty flavor and texture
  • Flaxseed meal – this is a great way to add additional fiber to these bars without changing the taste!
  • Maple syrup – I love the flavor of maple syrup in these as a sweetener without the need of refined sugar.  Honey is a great option as well!
  • Vanilla – I just personally love the flavor this adds to the bars
  • Dark chocolate chips – there’s just something about dark chocolate and sea salt that creates the perfect combo and really makes these bars so rich and decadent!  I used Lily’s dark chocolate chips which are gluten-free, vegan and sweetened with stevia making the sugar content really low and they taste delicious!  You could also of course use regular chocolate chips, but the sugar content will be much higher.
  • Coconut oil – I like mixing in a little coconut oil when melting chocolate because it makes the chocolate a little thicker and really helps create that perfect shell when it hardens without affecting the taste

HOW TO MAKE CHOCOLATE ALMOND BUTTER BARS

You guys, these dark chocolate almond butter bars are SO easy to make!  Simply mix the almond butter, almond flour, flaxseed meal, maple syrup, vanilla and a pinch of salt together until fully combined, then transfer the mixture to an 8×8 inch square pan and spread it out until you have an even layer.  Then in a microwave-safe bowl, melt the dark chocolate chips and coconut oil in 15 to 20 second intervals until the chocolate has melted and spread it evenly over top of the almond butter layer.  Cover and place in the fridge to chill for a minimum of 3 hours (or overnight) and that’s it!  Easily thrown together in under 15 minutes and oh so DELICIOUS.

When ready to serve, I like to take them out of the fridge and wait about 15 or 20 minutes before cutting the bars to avoid the chocolate from cracking.  As you can see from my photos, the chocolate still might crack a little (whoopsy), but that definitely won’t affect their taste!  I also have zero patience when it comes to waiting to eat sweets 😉

CAN I MAKE THESE WITH PEANUT BUTTER?

Of course!  And I HIGHLY recommend this.  I mean Reeses Cups anyone??  There are actually so many fun variations you can do to make these bars and any type of nut butter will work great.  I even like to sprinkle some sliced almonds or other chopped nuts on top of the chocolate layer and let the bars harden.  It gives them a really nice crunch!

Dark Chocolate Almond Butter Bars

These Dark Chocolate Almond Butter Bars are rich, fudgy and make the perfect sweet treat with just a few simple ingredients and zero baking required!

  • Prep Time: 10 mins
  • Total Time: 10 mins

Ingredients

  • 1 1/3 cup almond butter
  • 1 cup almond flour
  • 1 Tbsp ground flaxseed meal
  • 1/3 cup maple syrup (or honey)
  • 1 tsp vanilla
  • Pinch of sea salt

Topping

  • 1 1/2 cups dark chocolate chips, I used Lily’s
  • 1 Tbsp coconut oil
  • Flaky sea salt

Instructions

  1. Line an 8×8-inch pan with parchment paper and set aside.
  2. To make the almond butter layer, in a medium bowl mix together almond butter, almond flour, flaxseed meal, maple syrup, vanilla and a pinch of salt until all combined.  Spread the almond butter mixture in in the pan, pressing down with the back of a spoon, or your hand, so that you get a nice even layer.
  3. In a medium microwave-safe bowl, melt the dark chocolate chips and coconut oil in 15-20 second intervals until melted and spread in an even layer over top of the almond butter mixture using a spatula.
  4. Cover and place the bars in the fridge for at least 2-3 hours (or overnight) until the chocolate has hardened and bars are set.  When ready to serve, let the bars sit at room temperature for about 15 minutes before slicing to avoid cracking the chocolate.  Store bars in the fridge or freezer and enjoy!

*These bars will last in the fridge in a sealed airtight container for up to two weeks and you can freeze them for up to 3 months
