If you’re looking for a dish with TONS of flavor then look no further.  This Cajun Sausage and Cauliflower Rice Skillet has the perfect amount of bold, zesty flavors to spice up an otherwise boring cauliflower rice!  I mean you can’t go wrong with this mixture of andouille chicken sausage, bell peppers, onions, and garlic all sautéed together with my homemade cajun seasoning and tender cauliflower rice.

This is a perfect low carb meal for busy weeknights because this recipe is quick, super EASY and makes delicious leftovers!  The great thing about cooking with cauliflower is that you can really have fun with a variety of seasonings since cauliflower by itself is pretty bland and tasteless so it takes on whatever flavors you throw at it.

Ingredients You’ll Need

  • Cauliflower rice – you can use fresh or frozen store-bought riced cauliflower in this recipe or easily make your own!  (See below for additional instructions)
  • Andouille chicken sausage – I used this andouille chicken sausage, but any cajun-style sausage will work in this recipe
  • Bell peppers – a combination of red and green bell peppers, but you can use whatever colored bell peppers you’d like in this
  • Onions – you’ll need a 1/2 cup of white or yellow onion along with some chopped green onions for color
  • Garlic – you can use fresh chopped garlic or minced garlic from the jar
  • Chicken broth – feel free to use chicken broth, vegetable broth or any stocks you have on hand.  You could also use water, but you’ll lose some of the flavor
  • Cajun seasoning – I used this delicious homemade cajun seasoning

How to Rice Your Cauliflower

The best part about cauliflower rice is that you can find it everywhere these days!  I find that it’s honestly much easier to just use store-bought riced cauliflower (either fresh or frozen) straight from the bag since there’s no large chunks of cauliflower to worry about and the rice is uniform in size.  You can of course rice your own cauliflower, if you’d prefer!  To do this, simply chop up one head of cauliflower into florets and place them in the bowl of a food processor.  Then just pulse several times until the cauliflower resembles grain-like “rice.”  Depending on the size of your food processor, you may need to do this in batches.  Just be careful not to over-process the cauliflower as it can become mushy.

How to Make Cajun Cauliflower Rice Skillet

  1. Chop, chop, chop!  Chop all your veggies and slice up the andouille chicken sausage.  If making your own riced cauliflower, chop one head of cauliflower into florets and pulse in a food processor until the cauliflower resembles “rice.”  You can also use fresh store-bought riced cauliflower or a frozen bag of riced cauliflower.
  2. Cook the sausage.  Heat 2 tablespoons of olive oil in a large skillet over medium-high heat and cook the andouille chicken sausage until browned and cooked through, about 6 to 7 minutes.
  3. Sauté the vegetables.  Add the chopped onion and bell peppers and sauté for 3 to 4 minutes, until softened.  Add in the garlic and cook for an additional 30 seconds.
  4. Add in cauliflower rice.  Add the cauliflower rice to the skillet along with the chicken (or vegetable broth) and 1 tablespoon of cajun seasoning, mixing well.  Let the cauliflower cook for about 5 to 6 minutes until softened.  Make sure not to cover the pan as steaming the riced cauliflower will make it mushy.  Turn the heat off, mix in the green onions, and enjoy!

Can I Use Frozen Cauliflower Rice?

Absolutely!  I’m a huge fan of keeping bags of frozen cauliflower rice in my freezer to use any time I want to whip up a quick dinner or I’m in a pinch.  No need to thaw the frozen cauliflower rice either before cooking, you just want to make sure any large clumps are broken up before dumping it out onto your hot skillet.

This sausage and cauliflower rice will last for 3 to 4 days stored in a sealed, airtight container in your refrigerator.  Unfortunately I do not recommend freezing this meal as the texture of cooked cauliflower rice changes after being frozen and does not hold up well.

Ingredients 

  • 2 tablespoons olive oil
  • 6 ounces andouille chicken sausage, sliced
  • 1/2 cup onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 4 cups riced cauliflower, fresh or frozen
  • 1 tablespoon cajun seasoning
  • 1/4 cup chicken, or vegetable broth or stock
  • 1/4 cup green onions, chopped

Instructions
