Yes I did in fact say chipotle and yes this is just as delicious as it looks.  Promise.

This weekend actually turned out to be quite beautiful (despite the insane amounts of rain we’re having this week) and the weather definitely proved to be that of a day in August – HOT.  Lemme tell you, this shrimp cocktail recipe was the perfect dish to serve up after lying out by the pool!  It is satisfying without being too filling and the chill on the shrimp was just what I needed after sweating my booty off for a few hours outside.This truly is the best party recipe too….I mean who doesn’t love a good shrimp cocktail??  And it’s so much easier to serve rather than setting out a platter because no one has to worry about dipping!  Plus I just think it looks kind of pretty…

Just sayin.

Can you tell I’m trying to get all these refreshing summer dishes in before Fall hits and I need to stock up on canned pumpkin??  You remember my obsession last year, I even hosted a Pumpkin Palooza which I will absolutely be doing again here in the next few months.Oh yes, BE excited.

Chipotle Shrimp Cocktail

Flavorful Chipotle Shrimp Cocktail marinated in a delicious sweet and spicy sauce for the perfect summer appetizer!

Total Time: 10 minutes
Servings: 8 servings

Ingredients 

  • 1 large red onion
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 2 lb. peeled and deveined, large cooked shrimp with tails
  • 1 cup ketchup
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup fresh lime juice
  • 3 Tbsp. orange zest
  • 1/2 cup fresh orange juice
  • 2 to 3 canned chipotle peppers in adobo sauce, chopped

Instructions 

  • Cut onion and bell peppers into thin strips and layer with shrimp in a large zip-lock bag.
  • Whisk together ketchup, cilantro, lime juice, zest, orange juice and chopped chipotle peppers and pour over shrimp in the bag. Seal and chill, allowing to marinate for 12 to 24 hours.
  • Pour into a bowl when ready to serve, enjoy!

    So my boyfriends favorite ‘food word’ is chipotle. His least favorite ‘food word’ may or may not be shrimp… maybe if I combine the two, he will try the recipe. haha.
