So confession.  This is the FIRST time I have ever made scones.

For some reason I was always nervous that they were too hard to make, too complicated for someone who is embarrassingly horrible at baking (yeah I said it) and that they would take way too much time for a lazy Sunday morning.  Boy was I wrong.WAY wrong.Scones are sooo easy!!  And you have no idea how excited I was to find this little tid bit of information out.  Yes I know I’m a little behind in the baking scene and I’m sure most of you reading this are making fun of me (bite me), but hey, it’s those little pleasures in life that make us the most happy, right?

Well….guilty pleasures.

Another confession of mine, which I know you all will fall over in your chairs over, is that I actually hate coffee.  I can’t even stand the smell of it, let alone the taste, which is probably why I hate airports so much…they WREAK of coffee aromas.  And trust me folks, I’ve tried!!  Everything from a vanilla mocha lattes to a caramel macchiatos…nothing does it for me.  BUT one thing I do love from Starbucks are their amazing cinnamon scones (you see where I’m going with this…).  They are seriously, without a doubt, the best things I’ve ever had.  And yes I know they’ve most likely been sitting there for a week a few days, but I block that out of my head and simply focus on the deliciousness that IS a Starbucks scone.

So whether you are a coffee drinker or just love some piping hot tea on your lazy Sunday morning, whatever your beverage of choice, pair it with one of these scones and I promise it will be one of the better parts of your day.  Unless you win the lottery which in that case I hate you.

Cinnamon Raisin Scones

Light and fluffy Cinnamon Raisin Scones studded with raisins all drizzled with a vanilla glaze! Perfect for breakfast or brunch!
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Servings: 12

Ingredients 

  • 2 cups whole wheat flour
  • 1/4 cup brown sugar
  • 3 tsp baking powder
  • 1/2 tsp. salt
  • 3 Tbsp cold light butter
  • 1/4 cup fat-free milk
  • 2 tsp. vanilla extract
  • 1 tsp. cinnamon
  • 2 eggs
  • 1/2 cup raisins, microwave with a teaspoon of water to plump

For glaze:

  • 1/2 cup powdered sugar
  • 2 tsp. fat-free milk
  • 1/4 tsp. vanilla extract

Instructions 

  • Preheat oven to 400 degrees F.
  • Mix together flour, brown sugar, baking powder, and salt. Cut in cold butter, using a pastry cutter or two knives, until mixture is in coarse crumbs.
  • Add in milk, vanilla extract, cinnamon and slightly beaten egg and mix until blended.
  • Lay dough out on a lightly floured surface and add in raisins, kneading dough just a few times to combine. Then form dough into a 9-inch disc (about 3/4-inch thick).
  • Using a pizza cutter (because that’s all I had), slice dough into 12 equal pieces. Bake for about 15 minutes and allow to cool.
  • Meanwhile, whisk together powdered sugar, milk and vanilla extract in a bowl until smooth and then drizzle over cooled scones. Enjoy!

    Hi can I just ask is this self raising whole wheat flour? Or plain, I’m new to all this lol. I have some Allinson self raising wholewheat and and some strong wholewheat bread flour and some spelt flout which 1 would he best please help? X

      I just used plain whole wheat flour, but YES you can use self-rising flour! 🙂 Just omit the baking powder and salt in the recipe as you won’t need them – hope they taste delicious!

    These scones are AWESOME!! I made them this afternoon and my dad already had four of them! Of course I tried them too, and all I can say is: They’re to die for! Not joking. Also I love the fact that they’re so healthy. I might try the same recipe without the raisins next time though, so more like cinnamon swirl scones. But I most definitely recommend them to everyone!

    i made these tonight..came out awesome! I made them so i could eat it with my breakfast tomorrow but of course I had one after dinner instead as well…gets me everytime haha…

    p.s. I only had 1 egg (I realized this AS I was cooking)…if anyone every comes across this problem…1 egg= 1/4 C apple sauce plus 1/2 tsp baking powder. turned out just fine.

    The best way to make the the disk before cutting is to pat it GENTLY into shape with your hands.Don’t mess with it too much, and don’t worry about it looking perfect.It will come out nice and tender. I like to make mine about an inch thick and slice it with a pizza cutter. THANKS for the delicious recipes!
