Here’s What You’ll Need
- chicken – I like to use shredded rotisserie chicken because it’s quick and easy with so much flavor. You could also use boneless skinless chicken breasts, chicken thighs or any leftover chicken or turkey you have in your fridge.
- vegetables – I used a combination of carrots, celery, onion, and mushrooms. You could also add in some bell peppers, butternut squash or even chopped sweet potatoes.
- olive oil – I like to use a good quality olive oil to sauté the vegetables and build the flavor base.
- garlic – we are using A LOT in this recipe (yes 10 garlic cloves), but trust me it tastes absolutely amazing. Garlic is such a powerful antioxidant that strengthens immune function and just overall makes you feel really good. Don’t worry, the garlic definitely mellows out while cooking so don’t expect the flavor to be too intense!
- chicken stock – I used low-sodium chicken broth, but vegetable broth would work or any stocks you have in your pantry. Make sure to adjust the amount of salt used if you don’t use a low-sodium broth.
- chickpeas – also known as garbanzo beans, these are a great source of fiber and plant-based protein that also make this soup extra filling.
- kale – this is a hearty leafy green that packs in the antioxidants, vitamin C and other nutrients good for your health. You could also use fresh spinach in place of the kale and even sprinkle in some fresh parsley or other fresh herbs.

- Saute the vegetables. Heat olive oil in a large Dutch oven or large soup pot over medium heat. Add the onion, celery, and carrots and cook until softened, about 5 minutes. Stir in the mushrooms and garlic and continue cooking another 2–3 minutes until fragrant.
- Build the broth. Pour in the chicken stock and stir in the bay leaves, turmeric, crushed red pepper flakes, salt, and chickpeas. Bring everything to a gentle boil.
- Simmer. Add the shredded rotisserie chicken, reduce the heat to low, cover, and let the soup simmer for 15–20 minutes so all the flavors meld together.
- Add the kale. Stir in the baby kale and simmer another 5 minutes until wilted and tender.
- Serve and enjoy. Remove the bay leaves, taste and adjust seasoning if needed, then serve warm with fresh herbs, cracked black pepper, or a squeeze of fresh lemon juice if desired.

My new favorite soup!
First I made this in instant pot, using smoked paprika instead of normal paprika:

I strained out juices towards broth for soup and shredded 3 cups of the meat for soup and set rest aside for other meals.
Next, put pot on saute mode and followed recipe adding veggies and stirring in bits from bottom of pot for 4 mins and then the mushrooms and garlic for 3 mins.
When done I turned off heat, added rest of ingredients, put lid on in venting and then set to slow cook setting on instant pot for 4 hrs.

This soup is delicious! My 6 year old and 9 year old boys devoured it. The only changes I made were, I omitted mushrooms because I forgot to buy them. I used a red bell pepper instead of flakes, and I only had 4 cups of broth. I will definitely make this again and again!
