Starting my mornings off with a delicious healthy breakfast is SO important yet finding the time to actually make something worth enjoying before running out the door can be tough.  That’s why I LOVE making overnight oats!  I can literally throw everything together in just 5 minutes the night before then wake up the next day, add my favorite toppings and I’m all set!  Quick, easy and no clean up necessary.  Now that’s my kind of breakfast!

The great thing about making overnight oats is that there is absolutely NO COOKING involved at all.  You just mix all your ingredients together the night before and wake up to a delicious breakfast!  Just remember anything you add to these oats will become absorbed overnight so you’ll want to add the granola and other toppings right before eating.

This is a basic recipe for overnight oats (equal parts rolled oats, milk and yogurt) so feel free to add your favorite toppings or fruit, but personally there’s just something about fresh blueberries that I love with my morning breakfast.  The added granola tastes amazing with the blueberries and gives everything a nice crunch.  You could either use my super easy 3-ingredient granola recipe or just use store-bought if you prefer.  Whatever is easiest!  Then I drizzled a little honey for some added sweetness.

Ingredients 

  • 1/3 cup old-fashioned rolled oats
  • 1/3 cup plain Greek yogurt
  • 1/3 cup unsweetened almond milk
  • 1 Tbsp chia seeds
  • 1/2 Tbsp honey
  • 1 tsp. vanilla extract
  • 1/4 tsp. cinnamon

Toppings:

  • 1/4 cup blueberries
  • 2 or 3 Tbsp granola
  • Drizzle of honey, if desired

Instructions 

  • In a jar or bowl, combine oats, yogurt, almond milk, chia seeds, honey, vanilla and cinnamon, mixing well.
  • Cover tightly with a lid or plastic wrap and refrigerate overnight.
  • Top with fresh blueberries (or any fruit of your choice), granola and a drizzle of honey, if desired. Enjoy!

    I make over night oats with raspberries, blueberries and strawberries. Natural Greek yogurt and it is delicious. I also add chia seeds too.
    Best breakfast ever.
