So I leave for vacation today (as in less than 8 hours) and I still have yet to pack, get blog posts scheduled and find my favorite swimsuit.  BREATHE.

I swear it’s the most ridiculous things that make me stress out like some crazy person, but I have a whole to-do-list in my head and no time to check things off!  You and I both know we really only need a few key items on vacation:

Swimsuit
Sunscreen
Cute cover-up
Beach towel
A good book!

And you and I both also know that a lack of blog posts for a week aren’t the end of the world, so why the freak out??  Um because it’s in my nature as a woman to stress out over every little thing and once I complete one task I’m immediately reminded of another that I really have no intention of doing forgot about.

See told you….crazy person.

But at least I found time to share with you my latest obsession….kale chips.  It’s cheap to buy, easy to make and is extremely healthy!  I tossed these with a little olive oil and a sprinkle of sea salt and they came out delicious.  Perfect go-to snack when you have the serious munchies.

RECIPE

Kale Chips

Yield: 6 servings 1x

Ingredients

  • 1 bunch kale (about 6 oz)
  • 1 Tbsp olive oil
  • Sprinkle of sea salt, to taste

Instructions

  1. Preheat oven to 300 degrees F.
  2. Wash and dry kale, remove center ribs and cut into 2 inch pieces (Kale shrinks up when you bake it so you want the pieces to be rather large). Throw kale pieces in a bowl and toss with olive oil.
  3. Lay out on a baking sheet and sprinkle with sea salt. Bake kale for about 20 minutes, or until crisp. Enjoy!

    I can so relate to the stress. Think it’s that primitive, female instinct of having to and wanting to be in control and on top of things. However, as you said, at the end of the day it’s about being resourceful and creative and also enjoying life And your vacation!! Who cares what you left behind, what you forgot to pack or post as long as you have time to read that book, wear that top and enjoy the sunshine? The Kale chips look awesome, healthy and moorish, grab a few and enjoy the sun 🙂 I, for one, think they’re a brilliant idea!

    I LOVE kale chips. I only discovered them recently. I had a ton of kale in my garden and decided to give it a try. They were amazing (I also used nutritional yeast on them) and totally addicting. My neighbors had some and begged me to make more. Sadly, aphids killed my kale. No more chips…. 🙁

  49. I LOVE Kale chips and make them all of the time. Mine always turn a funny brownish colour though. Kind of like they are burning but half the time they aren’t crunchy yet, so I have to keep them in longer. I put them on parchment paper and sometimes use a little lemon. Do yours ever do this?

    I’ve been making kale chips for a long time but I’ve used twice as much olive (undoubtedly more calories and and also coated them in grated parmesan cheese (also more calories) — the extra calories however don’t add up to too much. Mine don’t get totally crisp – maybe because of the extra olive oil, but they are so good I eat two baking dishes of them in a few minutes. For an amazing desert, try instead coconut oil with shredded coconut — but that will add on more calories. You won’t believe how delicious it is though.
