Ingredients You’ll Need

  • egg noodles – I used wide egg noodles for that classic pairing for beef stroganoff. Their soft texture perfectly soaks up the creamy sauce. You could also serve over other noodles, brown rice, mashed potatoes or even cauliflower mash.
  • ground beef – lean ground beef keeps this recipe lighter while still delivering plenty of hearty, beefy flavor. You could also use ground turkey or even ground chicken.
  • mushrooms – baby bellas provide the classic earthy flavor every great stroganoff needs. Finely chopping them also helps them practically melt into the sauce.
  • onion – finely chopped white onion adds sweetness and depth to the sauce. You could also use a yellow onion, shallots or even green onions in this recipe.
  • garlic – fresh cloves garlic is always best! If you don’t have fresh garlic, feel free to substitute with a 1/2 teaspoon of garlic powder.
  • beef broth – low-sodium beef broth creates the base of the sauce while allowing you to control the salt. You can also use beef stock, chicken broth, vegetable broth, or simply use water and mix in some beef bouillon.
  • worcestershire sauce – adds savory umami flavor with just a hint of tanginess.
  • beef base – I used Better than Bouillon beef base which enhances that rich beef depth of flavor and is a must in this recipe.
  • all-purpose flour – helps to thicken the sauce.
  • Greek yogurt – this makes the sauce nice and creamy. It is also higher in protein and lower in fat than sour cream, but if you don’t have Greek yogurt on hand, sour cream is a great substitute or you could substitute with heavy cream.
  • fresh herbs – I LOVE fresh thyme and parsley in this dish and I really think it takes the flavor to a whole other level.

How to Make Ground Beef Stroganoff

  1. Prep. Chop up the onion, garlic, mushrooms and fresh thyme. Set those aside and you’re ready to get started cooking!
  2. Boil water and brown meat. Fill a large pot with water and bring it to a boil on the stove. While the water is coming to a boil, add the ground beef to a large skillet over medium-high heat and cook until browned and crumbled with a wooden spoon. Drain any excess grease, transfer the cooked ground beef to a plate and keep the heat on the skillet.
  3. Sauté the onion, garlic and mushrooms. In the same skillet you used to brown the meat, drizzle a little olive oil (or butter) in the hot pan and sauté the onions, garlic and fresh mushrooms until onions are translucent and mushrooms are cooked down, about 7 more minutes.
  4. Make the sauce. Add in the cooked ground beef and sprinkle with 2 tablespoons of flour, stirring until fully incorporated, mixing any lumps that form. Pour in the beef broth, Better than Bouillon, Worcestershire sauce, fresh thyme and season with salt and pepper. Mix well and bring to a boil. Once stroganoff sauce starts to boil, turn the heat to low and let the sauce simmer for 4-5 minutes, until the sauce thickens slightly.
  5. Boil the egg noodles. While the sauce simmers, add the egg noodles to the boiling water and boil per the package instructions.
  6. Let’s make it creamy! Once the sauce has thickened, turn the heat off and mix in the Greek yogurt. Stir to combine everything and season to taste, if needed. Serve over cooked noodles, garnish with fresh parsley and enjoy this comforting meal!

Tips for the Best Ground Beef Stroganoff

  • Brown the beef until deeply caramelized – instead of cooking the ground beef until it’s no longer pink, let the meat mixture develop some golden brown bits before stirring. Those browned bits add incredible depth of flavor and make the sauce taste like it’s been simmering for hours.
  • Don’t rush the mushrooms – mushrooms naturally release a lot of moisture as they cook. Let them cook until that liquid evaporates and they begin to brown slightly.
  • Use fresh garlic and fresh thyme whenever possible – fresh herbs and garlic make a noticeable difference in a simple recipe like this, adding brightness and great flavor that dried ingredients can’t quite match.
  • Remove the skillet from the heat before adding the Greek yogurt – this is the most important step! Greek yogurt can separate if it’s boiled. Let the sauce cool for a minute or two, then gently stir in the yogurt until smooth and creamy.
  • Cook the egg noodles just until al dente – they’ll continue absorbing some of the sauce after serving, so slightly firm noodles hold up much better than overcooked ones.
  • Reserve a little pasta water – before draining the noodles, save about ½ cup of the cooking water. If the sauce thickens too much, a splash of pasta water helps loosen it while keeping it silky and creamy.
  • Finish with fresh parsley and plenty of black pepper – a sprinkle of fresh parsley adds color and freshness, while cracked black pepper gives the finished dish that classic stroganoff flavor.
  • Serve immediately for the creamiest texture – like most creamy pasta dishes, stroganoff is at its best right after it’s made, when the sauce is perfectly smooth and the noodles are coated in every bite.

How to Serve

  • egg noodles – this is the traditional way to serve this hearty dish, but any type of pasta will work in this recipe.
  • brown rice – this would also taste great served over brown rice, white rice, wild rice or even cauliflower rice.
  • mashed potatoes – this rich and creamy sauce would pair perfectly smothered over buttery mashed potatoes.
  • mashed cauliflower – for a low-carb option, try serving this over creamy mashed cauliflower.
  • zucchini noodles – for another healthier, low-carb option, toss with some tender zucchini noodles made with your spiralizer.
  • side salad – serve this beef stroganoff with a healthy Caesar salad or this crisp chopped salad.
  • crusty bread – to soak up all that delicious gravy!

Variations and Substitutions

  • Make it dairy-free – you can use dairy-free yogurt or cashew cream in place of Greek yogurt.
  • Make it gluten-free – you can use cornstarch, arrowroot powder or gluten-free flour and make sure to serve over gluten-free egg noodles or GF pasta. Also, swap the Worcestershire sauce for coconut aminos.
  • Add extra veggies – feel free to throw in extra veggies for a boost of nutrition like leafy spinach, peas or green beans.
  • Swap the protein – instead of tender ground beef, you can use ground turkey, ground chicken, ground sausage, or make with meatballs. Sliced flank steak, sirloin steak, chuck roast or ribeye are the best cuts of beef for a more classic beef stroganoff recipe.

Prepping and Storage

Leftovers should be stored in a sealed, airtight container in the refrigerator and will last up to 3 to 4 days. Keep in mind, the noodles will soak up a lot of the sauce as it sits overnight in the fridge so this dish tastes best enjoyed fresh as possible. Feel free to add a splash of beef broth to loosen up the sauce when re-heating.

Frequently Asked Questions

Can I substitute sour cream for the Greek yogurt?

Absolutely! Sour cream is the usual choice for traditional beef stroganoff and works perfectly. Greek yogurt is simply a healthier alternative that adds extra protein while keeping the sauce rich and creamy. You could also use cream cheese.

Will the Greek yogurt curdle?

Not if you stir it in after removing the skillet from the heat. Let the sauce cool slightly before adding the yogurt, and avoid bringing it back to a boil afterward.

What are the best mushrooms to use?

Baby bella, also known as cremini mushrooms, have the richest flavor, but white button mushrooms work great too.

Can I make this ahead of time?

Yes! The sauce reheats beautifully. For the best texture, cook fresh noodles just before serving.

Can I freeze beef stroganoff?

Yes, but it’s best to freeze only the beef sauce. The noodles can become soft after thawing. Cook fresh noodles when you’re ready to serve.

Can I make this gluten-free?

Yes! Simply use your favorite gluten-free egg noodles and substitute the all-purpose flour with a gluten-free 1:1 flour blend or cornstarch slurry.

Can I add more vegetables?

Definitely! Spinach, peas, kale, or even finely diced carrots all make great additions without changing the comforting flavor of the dish.

What makes this ground beef stroganoff healthier?

This recipe keeps all the classic comfort food flavors while making a few lighter swaps. Lean ground beef reduces saturated fat, Greek yogurt replaces much of the traditional sour cream or heavy cream while adding protein, and plenty of mushrooms bulk up the dish with vegetables and savory flavor. The result is a creamy beef stroganoff that’s lighter without sacrificing the rich taste everyone loves.

I made this recipe for the first time tonight and it’s honestly so good! I love beef stroganoff and this was so easy to put together. I will definitely be making it again.

Left out egg noodles altogether! Not good for people wanting to stay away from high carbs. Browned my burger in large skillet while adding chopped onion, portabella mushrooms, garlic into same pan with EVOO as directed. They all cooked at same time while I stirred. I then added the beef broth and 4 Tablespoons of whole wheat flour (healthier), then one cup Oikos triple zero plain Greek yogurt ( my preference) plus since it was so runny I added one cup lowfat sour cream. Lastly, added the Thyme, Worcester and other ingredients. Cooked another 20 minutes or so with lid on half the time. Microwaved my bag of cauliflower and did a small chop when plating. Poured beef stroganoff over top and YUM! Plus I made the 1 serving size and had plenty for leftovers. Very healthy! No diabetes for me.

Why am I preheating the oven?

    1. Kelly Gellner says:

Sorry about that! Just realized I added that in by mistake, I’ve updated the recipe instructions 🙂
