Is it just me or do cocktails and summer just go hand in hand??  I’m not a huge drinker (unless its wine, does that count?), but there is just something about summer that makes me LOVE a good cocktail!  Only problem is, my happy hours have been dwindling because lately all my friends have been getting pregnant!  It must be in the water.  Luckily they are all major troopers and still come out to all the parties and gatherings I’ve been throwing this summer so I wanted to come up with a great mocktail that they could enjoy without feeling left out!

I introduce to you the watermelon lime mocktail.  Lemme tell you….this pitcher was devoured by everyone in less than an hour, including the non-preggo ladies so it’s a good idea to double or even triple this recipe!  This is made without any sugar too so drink it without guilt and allow yourself to enjoy all the yummy barbeque goodies.  You could of course add alcohol to this if you wanted to make a cocktail pitcher, but this is so great for all those mommys-to-be that I just HAD to share this!

Also for more clean recipe ideas, feel free to check out my Pinterest page HERE.  Anytime I come across a recipe that I want to try I add it to my list and throw it into rotation.  If it’s a keeper I highlight it on my meal plan chart and add it on my list for the next week.  It’s really important to keep trying new things though so you don’t get bored of the same thing day in and day out.  If you don’t like it, don’t make it again!  You really have nothing to lose except inches – hehe.

Watermelon Lime Mocktail

This Watermelon Lime Mocktail makes the perfect summer beverage that is refreshing, delicious and easily made with just 4 simple ingredients!

Ingredients 

  • 8 cups seedless watermelon cubes
  • 6 Tbsp honey, or agave
  • 1/3 cup fresh lime juice
  • 1 1/2 cups water
  • Few sprigs of mint

Instructions 

  • In a blender, puree watermelon cubes and strain into a large bowl through a mesh sieve. Stir in honey and lime juice and transfer to a pitcher.
  • Stir in water, add ice, mint and chill. Enjoy!
