- 1 Tbsp olive oil
- 1/2 cup onion chopped
- 2 cloves garlic minced
- 1 small jalapeño chopped (optional)
- 1 head cauliflower 3 cups cauliflower rice
- Salt and pepper to taste
- Juice of 1 lime
- 1/3 cup fresh cilantro chopped
In a large skillet over medium heat, drizzle olive oil and sauté onion 3 to 4 minutes then add garlic and jalapeño, sautéing an additional minute.
Increase the heat to medium-high and add the riced cauliflower to the skillet, season with salt/pepper and cook until cauliflower is soft and tender, about 5 to 7 minutes, stirring frequently.
Remove cauliflower rice from heat and mix in the lime juice and cilantro. Serve and enjoy!
