Pretty sure Kenny Chesney said it best, it doesn’t get much better than summer. Sun, sand, flip flops…oh yeah and lots and LOTS of fresh fruit!!
Strawberries are probably my absolute favorite fruit during the summer so when I saw this recipe I knew I had found the PERFECT appetizer for my next gathering. Basil gives off such a strong aroma and I love the flavor it has when added to different dishes. It mixed incredibly well with the balsamic vinegar and strawberries, so much that you could even enjoy it without the bread. The great thing about making this is that it only takes about 5 minutes and is so easy! Plus it is sure to impress your friends which is never a bad thing 🙂
I paired this with my favorite bottle of Moscato wine and enjoyed a fabulous evening with my friends.
In a small bowl, combine strawberries, basil and balsamic vinegar. Spread goat cheese over toasted bread slices and top with strawberry mixture. Enjoy!

For the 4th my cousin made strawberries in a balsamic-basil sauce similar to this and served it over lemon ricotta pound cake. Absolutely delish! This looks like a great party food, and super tasty I’m sure.

I love your recipes! But, do you ever consider using RAW SUGAR instead of SPLENDA? I notice you recommend Splenda a lot. Splenda can actually yield conflicting results when trying to maintain or lose weight. Your body still wants the calories for the sweetness you put in it (like Diet Soda), so it’ll get those calories eventually to make up for it. Raw sugar isn’t processed food like Splenda is, and it is better for you in the long run – just keep your portions smaller.

I like this a lot. I was pleasantly surprised when I first tasted balsamic with strawberries but I am imagining the extra layer of flavor from goat cheese with the crispness of the bruchetta.. Wonderful
I have had strawberries with balsamic dressing before and it sure is good. Goat cheese with anything is delicious so this is sounding absolutely amazing.
I love bruschetta, but i have yet to venture into the world of using fruit as the main item in this dish! but this looks so good! someday i will be brave and try this! 🙂
Strawberries on bruschetta, have had them with Balsamic vinegar, but never like this.
