Healthy Sweet Potato Casserole

- 4 to 5 large sweet potatoes peeled and cubed (about 8 cups)
- 2 eggs
- 1/3 cup milk
- 1/4 cup maple syrup
- 4 Tbsp butter (or coconut oil)
- 2 tsp vanilla extract
- 1 tsp cinnamon
- Pinch of nutmeg
- 1/2 tsp salt
Pecan Streusel Topping:
- 1/4 cup oat flour
- 1/3 cup rolled oats
- 1/3 cup coconut sugar
- 1/2 cup chopped pecans
- 3 Tbsp butter
Boil the sweet potatoes. Peel and cut the sweet potatoes into 2-inch chunks and place them in a large pot of salted water. Bring to a boil over high heat. Reduce the heat to a simmer and cook until potatoes are very tender, about 15 to 20 minutes. Drain well.
Mash potatoes. Place the sweet potatoes in a large bowl and and mash using a potato masher or fork. Add in the eggs, maple syrup, milk, butter, vanilla, cinnamon, nutmeg and salt, mixing well with an electric mixer (or stand mixer) until smooth. Feel free to add in a splash of milk if you want a creamier texture. Make pecan streusel topping. In a medium bowl, combine rolled oats, oat flour, coconut sugar, chopped pecans and butter. Mix together using a pastry blender or your fingers until you get pea-size crumbles. Assemble casserole. Transfer mashed sweet potatoes to a 9×13-inch or 9×9-inch baking dish coated with nonstick spray. Sprinkle the oat topping over the sweet potato mixture in an even layer.
Bake. Place the sweet potato casserole in a preheated oven at 350 degrees F and bake for 30 to 35 minutes, until topping is crisp and lightly browned. Serve immediately and enjoy!
