Ingredients

For the apple filling:

  • 6 apples peeled and thinly sliced
  • 1/3 cup maple syrup
  • 1 Tbsp apple cider vinegar or lemon juice
  • 2 tsp vanilla extract
  • 1 Tbsp cornstarch (or arrowroot powder)
  • 1 tsp ground cinnamon
  • 1/2 tsp apple pie spice
  • Pinch of nutmeg
  • 1/4 tsp salt

Instructions

  • Prepare the apples.  Preheat your oven to 350 degrees F and lightly coat an 8×8 baking dish or 9×9 baking dish with nonstick spray. Peel, core and thinly slice the apples. In a large mixing bowl, combine the sliced apples with maple syrup, apple cider vinegar, vanilla, cornstarch, spices and salt. Toss until every slice is evenly coated. Transfer the apples to the prepared baking dish.
  • Make the crumble topping.  In the bowl you mixed your apples in (we’re trying to save you from cleaning too many dishes here), mix together the rolled oats, oat flour, chopped pecans, coconut sugar, and maple syrup. Add the cold cubed butter (or solid coconut oil). Using a pastry cutter, two forks, or your fingertips, work the butter into the mixture until coarse crumbles form.
  • Assemble and bake.  Evenly sprinkle the oat crumble over top of the apple filling, covering them completely. Bake the apple crisp in the oven for 40 to 45 minutes. The crisp topping will look golden brown and apples should be soft and tender when pierced with a fork. If the topping begins browning too quickly, loosely tent the baking dish with foil during the final 10 to 15 minutes.
  • Cool and serve. Allow the apple crisp to cool for about 10 to 15 minutes before serving. This gives the filling time to thicken. Serve warm with vanilla ice cream, frozen yogurt, or a dollop of Greek yogurt.

Notes

*This apple crisp will last 4 to 5 days covered in your fridge or you can freeze this (baked or unbaked) for up to 3 months.
