Ingredients

  • 1 lb ground chicken
  • 1/4 cup finely chopped cilantro
  • 2 green onions
  • 2 cloves garlic minced
  • 1 Tbsp lime juice + zest of 1 lime
  • 1/4 cup whole wheat breadcrumbs
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin

Avocado Cilantro Sauce:

  • 1 ripe avocado
  • 1/2 cup plain Greek yogurt
  • 1/4 cup fresh cilantro
  • Juice of 1 lime
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • 2-3 Tbsp water as needed for blending

For Serving:

  • 4 brioche buns lightly toasted
  • Leafy lettuce
  • Red onion slices
  • Avocado slices

Instructions

  • Mix the burger mixture. In a large mixing bowl, combine the ground chicken, chopped cilantro, green onions, garlic, lime zest, lime juice, breadcrumbs, egg, salt, pepper, and cumin. Gently mix everything together until just combined. Avoid overmixing, as this can make the burgers dense instead of tender.
  • Form the patties. Divide the mixture into four equal portions and gently shape into patties about ½-inch thick. Since ground chicken is naturally sticky, lightly wetting your hands with water or oil makes shaping much easier. Place the patties on a parchment-lined plate while you heat your grill or non-stick skillet.
  • Cook the burgers. Heat a grill, grill pan, or large skillet over medium-high heat and lightly oil the cooking surface. Cook the burgers for about 4-5 minutes per side, flipping only once, until they’re golden brown and the internal temperature reaches 165°F using an instant-read thermometer. Allow the burgers to rest for a few minutes before assembling.
  • Make the avocado cilantro sauce. While the burgers cook, add the avocado, Greek yogurt, cilantro, lime juice, garlic, and salt to a blender or food processor. Blend until smooth, adding water one tablespoon at a time until the sauce reaches your preferred consistency. Taste and adjust with additional salt or lime juice if needed.
  • Assemble the burgers. Lightly toast the brioche buns. Spread a generous layer of avocado cilantro sauce on the bottom bun. Top with lettuce, the chicken burger, red onion slices, avocado slices if using, and another drizzle of sauce before placing the top bun on the burger. Serve and enjoy!
