- 1 cup quick cooking oats
- 1 cup oat flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 2 eggs
- 1/2 cup plain Greek yogurt
- 1/4 cup milk
- 1/4 cup melted butter
- 1/2 cup cane sugar
- 1 1/2 tsp vanilla extract
- 1 cup blueberries
Prepare the pan. Preheat your oven to 350°F. Line an 8x8-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal. Mix the ingredients. In a large bowl, whisk together the quick oats, oat flour, baking powder, cinnamon and salt. In a separate bowl, whisk together the eggs, Greek yogurt, milk, melted butter, cane sugar, and vanilla until smooth and creamy.
Combine. Pour the wet ingredients into the dry ingredients and stir just until no dry streaks remain. Avoid overmixing to keep the bars soft and tender.
Fold in the blueberries. Gently fold in the blueberries with the oat mixture, reserving a small handful for the top if you’d like a prettier presentation.
Bake. Spread the batter evenly into the prepared pan. Sprinkle the extra blueberries over the top of the blueberry mixture. Bake for 30–35 minutes, or until the center is set and a toothpick inserted into the middle comes out mostly clean with just a few moist crumbs.
Cool. Allow the bars to cool in the pan for at least 20–30 minutes before slicing. They will continue to firm up as they cool. Slice into 9 square bars or 16 smaller bars.
