Watermelon, Cucumber and Feta Salad

This Watermelon, Cucumber and Feta Salad is bright, refreshing and the perfect summer side dish!  Simple to throw together and drizzled with the most delicious honey lime dressing!

Ingredients

For the salad:

  • 4 cups watermelon cut into 1/2-inch cubes
  • 3 cups baby arugula
  • 1 English cucumber chopped
  • 1/2 cup red onion thinly sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh mint leaves chopped

For the dressing:

  • 2 Tbsp olive oil
  • 3 Tbsp red wine vinegar
  • Juice of 1 lime
  • 2 tsp honey
  • Salt and pepper to taste

Instructions

  • In a small bowl or jar, whisk together olive oil, red wine vinegar, lime juice, honey and salt/pepper until smooth and combined.  Store in the fridge until ready to toss with the salad.
  • Combine watermelon, arugula, cucumber, red onion, feta cheese and mint leaves in a large bowl and drizzle with honey lime dressing.
  • Gently mix the salad until all combined and season with additional salt or pepper, as needed.  Serve and enjoy!
