- 5 to 6 cups baby spinach leaves lightly packed
- 2 cups sliced strawberries
- 1 avocado peeled, pitted and diced
- 1/4 cup sliced almonds
Poppy Seed Dressing:
- 1/4 cup olive oil
- 2 Tbsp red wine vinegar
- 1 Tbsp apple cider vinegar
- 2 Tbsp honey
- 1 Tbsp poppy seeds
To make the salad, combine the spinach, strawberries, avocado and sliced almonds in a large bowl and toss with poppy seed dressing.
To make the dressing, whisk together all ingredients until mixed well and toss with salad or cover and chill in fridge until ready to use.
