Raspberry Walnut Salad with Chicken

My favorite Raspberry Walnut Salad with Chicken made with leafy greens, fresh raspberries, shredded chicken, chopped walnuts, and sliced red onion all tossed with a creamy raspberry vinaigrette!

Ingredients

For the Salad:

  • 6 cups mixed greens I used baby spinach and arugula mix
  • 2 cups shredded chicken I used rotisserie
  • 1 cup raspberries
  • 1/2 cup red onion thinly sliced
  • 1/4 cup chopped walnuts

For the Raspberry Vinaigrette:

  • 1/2 cup raspberries fresh or frozen
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon finely chopped shallot
  • 1/2 teaspoon salt
  • Cracked black pepper to taste

Instructions

  • Combine all the ingredients for the raspberry vinaigrette in a blender and process until smooth.
  • To make the salad, toss together the mixed greens, shredded chicken, raspberries, red onion and walnuts in a large bowl. Drizzle the raspberry vinaigrette over top of the salad and give it a good toss or drizzle it over individual portions when serving.  Season with additional cracked black pepper, if desired, and enjoy!
