- 1/4 cup balsamic vinegar
- 3 tablespoons olive oil
- 2 tablespoons maple syrup
- 1 tablespoon Dijon mustard
- 1 teaspoon fresh thyme
- Salt and pepper to taste
Combine all the ingredients except for the fresh thyme into a blender and process until smooth or simply whisk together everything in a mason jar until emulsified.
This dressing can be stored in a sealed, airtight container in the fridge for up to 2 weeks. The olive oil may become solid after being stored in the fridge which is normal, so let the dressing sit out on the counter for about 10 minutes before serving and just give it a good shake.
