Gluten-Free Strawberry Banana Donuts

Delicious Gluten-Free Strawberry Banana Donuts that are soft, lightly sweetened with honey and baked, not fried, with zero oil or butter for the perfect Valentine's Day treat!

Ingredients

For the Donuts:

  • 1 cup oat flour
  • 1 cup almond flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup mashed very ripe banana about 1 1/2 bananas
  • 2 eggs
  • 1/3 cup almond milk or milk of choice
  • 1/4 cup honey
  • 1 tsp vanilla
  • 1/2 cup finely chopped strawberries

Instructions

  • Preheat oven to 350 degrees F.
  • In a large bowl, mix together almond flour, oat flour, baking powder and salt while in a separate bowl whisk together the mashed banana, eggs, milk, honey and vanilla.  Add the wet ingredients to the flours and mix until just combined, being careful not to over mix the batter.  Then fold in the finely chopped strawberries, mixing until incorporated.
  • Generously spray the donut pans with nonstick spray to make the donuts won't stick to the pan.  Then, using a pastry bag or ziplock bag, spoon the batter into the bag and snip off the corner.  Pipe the batter into each donut well until they are all filled.
  • Bake the donuts in the oven for 10 to 12 minutes, until golden and a toothpick inserted into the center comes out clean.  Remove from the oven and let them sit in the pan for about 2 minutes before removing and letting cool on a wire rack.
  • While the donuts are cooling, add the chocolate and coconut oil to a small microwavable-safe bowl and melt in the microwave in 15 to 30 second intervals (mixing each time) until you reached the desired consistency.  Dip the tops of the donuts into the melted chocolate and immediately top with sprinkles.  Enjoy!

Notes

* To store the donuts, place in a sealed airtight container for up to 3 days.
* You can also freeze these donuts (unfrosted) and simply thaw them out overnight so they're ready for the morning!
