Super simple Strawberry Spinach Salad with Poppy Seed Dressing that is healthy, delicious and the perfect summer staple!

It really doesn’t get much easier than this delicious salad!  It’s literally one of my favorites and since it is still nice and warm out I thought I’d share one last summer salad before the season comes to an end.  Anytime I have friends over or I need to make a quick salad for a crowd, this has always been my go-to.  It honestly never fails to please everyone and also looks gorgeous on the table!

Why We Love this Salad

This salad has all my favorite things.  Fresh strawberries, avocado slices, almonds, baby spinach all tossed together in a sweet honey poppy seed vinaigrette.  I promise you this salad is a MUST!

Ingredients You’ll Need

  • Spinach (or other leafy greens)
  • Strawberries
  • Avocado
  • Almonds
  • Olive oil
  • Red wine vinegar + apple cider vinegar
  • Honey
  • Poppyseeds

Make this salad your own!

If you don’t have baby spinach you could also use some fresh arugula or even mixed greens would work great with this.  Also if you like cheese on your salad, crumbled goat cheese or gorgonzola would taste amazing on top!  You could also add slices of onion, chopped walnuts or even shredded chicken, I mean the possibilities are endless so make this salad your own!

If you’re not big into salads then this is definitely the recipe to try!  I promise you it will kickstart your love for salads as it just appeals to everyone.  I mean who can resist sweet strawberries, fresh lettuce, creamy avocado and crunchy almonds??  Plus it takes no time to make!

Prepping and Storage

If you love this dressing as much as I do then I suggest making a huge batch of it to keep in your fridge any time you want to throw a quick salad together.  This dressing will last up to two weeks in the fridge and I like to keep mine in a mason jar with a lid so that I can just easily shake it up to quickly mix it then drizzle it over my salad.  Simple and delicious!

Ingredients 

  • 5 to 6 cups baby spinach leaves, lightly packed
  • 2 cups sliced strawberries
  • 1 avocado, peeled, pitted and diced
  • 1/4 cup sliced almonds

Poppy Seed Dressing:

  • 1/4 cup olive oil
  • 2 Tbsp red wine vinegar
  • 1 Tbsp apple cider vinegar
  • 2 Tbsp honey
  • 1 Tbsp poppy seeds

Instructions 

  • To make the salad, combine the spinach, strawberries, avocado and sliced almonds in a large bowl and toss with poppy seed dressing.
  • To make the dressing, whisk together all ingredients until mixed well and toss with salad or cover and chill in fridge until ready to use.
