Don’t you just love the holidays??

I’m utterly obsessed with this time of year….I mean let’s look at the facts, shall we?  Picking out that perfect tree (and attempting to get it home), putting up all those pretty Christmas decorations that you have had stored in your garage or attic all year long, the festive music that finally comes on the radio the day after Thanksgiving (yes you know that station is currently on REPEAT in my car), the fun-filled gatherings where you get to spend time with friends and family that you might only get to see once a year, umm one word – EGG NOG (duh), getting to watch all of your favorite Christmas movies that quite literally fill up the DVR, and of course my favorite thing about the holidays, all those family traditions passed down year after year!

Our family actually has a lot of crazy traditions that have just sort of stuck with us over the years…..one may or may not include dancing around my Grandma’s coffee table to the Christmas Polka, but THAT is a story for another time that should probably be discussed over an alcoholic beverage (or two).

Family has always been super important to us and that also includes super close friends that I have literally known so long that they might as well be a party of our family.  My parents have lived in the same house since I was 5 years old and many of those same sweet neighbors that I grew up with are still there as well.  Ever since I can remember my mom and I have been making cookies, candy and other baked goods as gifts for everyone in the neighborhood and this has become such a fun tradition for us!  Once we started making it a yearly thing, other families started joining in and now we have this huge exchange every year.

Not only does this keep us all close, but it means my house is filled with desserts for weeks!

That being said, Christmas is definitely a fun time to indulge in all those yummy sweets, but if I can find a way to make my favorite desserts just a little bit healthier well then that is just the best of both worlds!

Um you know I’m right.

Now I don’t know about you, but I have a serious love affair with Starbucks during the holidays.  I always look forward to getting their delicious Gingerbread Latte or a sweet Peppermint Mocha and, in the spirit of traditions, I always wait until after Thanksgiving on the morning of Black Friday to get in line for my first one of the year!  The great thing about Starbucks is if you don’t have time in the mornings to stand in line for that festive holiday drink, they have all sorts of flavors that you can make right at home or even at work!  Everything from white chocolate mocha, salted caramel and peppermint mocha to your favorite house blend or French roast.  Aside from whole beans and ground coffee, it is also super convenient that these flavors are available in K-Cups and packets of instant coffee as well!

Now I do enjoy my Starbucks coffee fix in the mornings, but these flavors are just TOO good to be strictly used for drinking!  And let’s be real….desserts are fun to make during the holidays, but they are also super time consuming.  That’s why I’m obsessed with mug cakes.  They are quick and easy to make, use simple ingredients that you probably already have on hand in your pantry and only take a little over a minute in the microwave to make!  I’m always so impressed with how moist and delicious the cake actually tastes in such little time, but it really is that good!  And since I love Starbucks so much, especially around the holidays, I thought it would be fun to make a mocha flavored mug cake!

With eggnog too of course.

This delicious cake is made with a combination of whole wheat flour and cocoa powder, Starbucks VIA Instant Coffee (I used the sweet and spicy Christmas blend, but feel free to use whichever flavor is your favorite!), dairy-free coconut milk eggnog, some unsweetened applesauce in place of oil, as well as a little sugar, nutmeg and some vanilla to sweeten things up.  Regular eggnog tastes just as great too, but we usually stick to almond or coconut milk in our house and their eggnog is crazy delicious!  I topped everything off with a dollop of whipped cream and a drizzle of chocolate syrup….well because why not?!  This was seriously amazing and makes such a perfect quick and easy holiday treat!

Eggnog Mocha Mug Cake

Get your chocolate fix with this Eggnog Mocha Mug Cake that is easy to make, less than 200 calories per serving and only takes 1 minute in the microwave for moist, delicious cake!

Ingredients 

  • 3 Tbsp white whole wheat flour
  • 2 Tbsp cocoa powder
  • 1 tsp Starbucks VIA instant coffee, I used the Christmas Blend
  • 1/2 tsp baking powder
  • 1 Tbsp raw sugar
  • 1/4 tsp nutmeg
  • 3 Tbsp dairy-free coconut milk eggnog, or regular eggnog
  • 2 tsp unsweetened applesauce
  • 1/4 tsp vanilla extract

Instructions 

  • In a small bowl, whisk together dry ingredients until completely combined then add in eggnog, applesauce and vanilla extract. Whisk together until all clumps are gone.
  • Spoon mixture into microwavable safe coffee mug and microwave on high for 1 minute and 15 seconds.
  • Allow cake to cool, top with whipped cream or chocolate syrup and enjoy!
