Oh how I love a good homemade dressing and this is one I like to keep on hand in my fridge at ALL times.  Bright lemon flavor, tangy dijon mustard, sweet honey and fresh herbs really make this the perfect dressing to throw on salads, drizzle over veggies or even use to marinate chicken, fish or shrimp!  No need to purchase store-bought salad dressing when it’s literally this easy to make your own 🙂

This dressing also makes it really easy to actually enjoy eating healthy!  I actually look forward to diving into a big leafy salad with this dressing on hand in my fridge and you can completely adapt this to your liking.

Ingredients You’ll Need

This easy dressing recipe requires just a few simple ingredients you probably already have at home in your pantry or fridge!  Here’s what you’ll need:

  • lemons – I just love the bright, fresh flavor these lemons bring to this dressing.  Feel free to add a little bit of the zest too for even more lemon flavor!
  • olive oil – I like to use a good olive oil that doesn’t have to be expensive, just make sure it’s cold-pressed and organic for the most flavor (in my opinion)
  • dijon mustard – this adds a little zip and helps to emulsify the dressing
  • honey – adds a nice sweetness that tastes amazing with the bright lemon flavor, you could also use maple syrup to make this vegan
  • shallots – I just love the light, sweet taste of shallots in this dressing!
  • fresh herbs – a combination of fresh thyme and rosemary, but you could use dried herbs as well.  I just always think fresh tastes best!

How to Make Lemon Dijon Herb Dressing

Making homemade dressings and vinaigrettes are literally SO dang easy and takes less than 5 minutes!  Simply whisk together all the ingredients in a jar or bowl, or you can use a blender or NutriBullet and blend until smooth.  If you do use a blender, make sure to mix in the shallots and herbs after blending.  Then just store the dressing in a sealed airtight container in the fridge until you’re ready to use.  This dressing will last up to 5 days in the fridge, but definitely tastes best as fresh as possible.

I personally like to store my dressings in mason jars because they have a nice tight seal, they are easy to take on-the-go, and you can just add all your ingredients and give the jar a good shake!

  • Dressing for salads or wraps
  • Drizzle over tomatoes, cucumbers and other veggies
  • Marinate chicken, shrimp or fish
  • Add it to quinoa or other grain bowls
  • Toss with chickpeas

Ingredients 

  • 1/4 cup lemon juice, about 2 lemons
  • 1/2 cup olive oil
  • 2 Tbsp honey
  • 1 Tbsp dijon mustard
  • 2 Tbsp shallot, minced
  • 1 tsp thyme, finely chopped
  • 1 tsp rosemary, finely chopped
  • Salt and pepper, to taste
