Tomato, Cucumber & Chickpea Salad
 
 
Serves: 6 Servings
Ingredients
  • 2 cups cherry tomatoes, halved
  • 2 cups cucumber, diced
  • 1 (15 oz) can chickpeas, drained and rinsed
  • ½ red onion, diced
  • 1 green bell pepper, diced
  • ¼ cup fresh parsley, chopped
  • Salt and pepper, to taste
For the dressing:
  • 2 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp red wine vinegar
  • 1 tsp cumin
  • 2 cloves garlic, minced
Instructions
  1. In a large bowl, combine tomatoes, cucumber, chickpeas, red onion and bell pepper; set aside.
  2. In a smaller bowl, whisk together all the ingredients for the dressing and toss together with the salad. Mix in fresh parsley and season with salt and pepper as needed. Enjoy!
