Cilantro Lime Cauliflower Rice

This Cilantro Lime Cauliflower Rice is the perfect low carb side dish that is healthy, delicious and easily made in minutes with just a few simple ingredients!

Yield: 4 Servings 1x



  1. In a large skillet over medium heat, drizzle olive oil and sauté onion 3 to 4 minutes then add garlic and jalapeño, sautéing an additional minute.
  2. Increase the heat to medium-high and add the riced cauliflower to the skillet, season with salt/pepper and cook until cauliflower is soft and tender, about 5 to 7 minutes, stirring frequently.
  3. Remove cauliflower rice from heat and mix in the lime juice and cilantro. Serve and enjoy!
