You guys it really doesn’t get much better than this.  Tender soft sweet potatoes roasted to perfection in the most delicious sticky sweet maple cinnamon glaze and topped with crunchy pecans!  This is literally one of my favorite holiday side dishes and while it may be a bit more on the indulgent side, there is no refined sugar used like most traditional sweet potato casseroles.  It’s all about balance, right??

These sweet potatoes are not only the perfect side dish for Thanksgiving, but I like to make them for Christmas as well!  My mom loves serving mashed potatoes so this option gives a little something for everyone.  Plus these sweet potatoes taste like dessert, so its a win-win.  This recipe is super simple to throw together, cooks all in one pan for easy clean-up, and is made with just a few simple ingredients.  I promise, anyone can make this!

Ingredients You’ll Need

  • sweet potatoes – these are the star of the recipe and can easily be chopped a few days in advance if you’re trying to prep your dinner.  Feel free to leave the skin on or peel it off, I just personally think the presentation looks better when the sweet potatoes are peeled.
  • maple syrup – this is what gives these sweet potatoes that amazing flavor and creates such a beautiful glaze!  Just make sure to use 100% pure maple syrup rather than pancake syrup.  You can also substitute the maple syrup with honey or even brown sugar if you prefer.
  • butter (or coconut oil) – because this is a holiday dish, there is just nothing cozier than melted butter mixed in with maple syrup and warm spices!  Coconut oil works great too in this recipe so that is another option if you don’t want to use butter (I used unsalted butter)
  • bourbon – this is such a must in this recipe.  The bourbon adds such a rich, slightly smoky flavor to these sweet potatoes that is like no other!  Plus it’s the holidays, so why not throw in a splash of whiskey!
  • vanilla – just do it.  And trust me on this.
  • spices – I used a combination of cinnamon and nutmeg which really punches up the flavor in these sweet potatoes.
  • pecans – I love the addition of these pecans with all the warm cinnamon and maple flavors, but you could also use walnuts or even cashews if you don’t have pecans.  Or feel free to leave out the nuts entirely!

How to Make Sweet Potatoes

  1. Chop the sweet potatoes.  This can easily be done ahead of time if you’re prepping all your food for the holidays.  I like to peel medium-sized potatoes and slice them into medallions which makes them a lot easier to cut.  You just want to make sure that all the pieces are roughly the same size so that everything cooks evenly.  Place the chopped potatoes in a 9×13 baking dish (or casserole dish) sprayed with nonstick spray.
  2. Make your glaze.  In a small bowl whisk together maple syrup, melted butter (or coconut oil), bourbon, vanilla, spices and salt.  Pour the mixture over the sweet potatoes and mix well so that they’re all coated.
  3. Time to roast!  Cover the sweet potatoes with foil and place in the oven at 400 degrees F for 15 minutes.  Remove the foil, stir the potatoes and place back in the oven uncovered for another 30 to 35 minutes, stirring them again halfway through.
  4. Add the pecans.  When the sweet potatoes have about 10 minutes left, sprinkle in the pecans and place back in the oven.  You’ll know the sweet potatoes are done when they are tender with a fork.
  5. Ready to serve.  Remove the sweet potatoes from the oven and let them sit for just a few minutes to soak up any extra sauce.  Serve them warm and enjoy!

Prepping and Storage

These sweet potatoes can be stored in a sealed, airtight container for up to  3 to 4 days in your fridge.

Ingredients 

  • 3 lb sweet potatoes, peeled and diced into cubes
  • 3 Tbsp butter, melted (or coconut oil)
  • 1/3 cup maple syrup
  • 2 Tbsp bourbon
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1/3 cup chopped pecans
