I love an easy weeknight dinner and trust me, this is way better than take-out!  This Asian ground turkey and green bean stir fry is a recipe that we literally make on a weekly basis because of how quick it all comes together.  Lean ground turkey with crisp green beans all tossed together with garlic, onions and the most delicious sweet and spicy sauce that is loaded with flavor!  We like to serve this over brown rice and I promise you the leftovers are almost better the next day making this perfect for meal prep!

Ingredients You’ll Need

For the Stir Fry

  • ground turkey – I used 93% lean ground turkey and you could go even leaner, but the turkey will be drier and not as flavorful.  You could also use ground chicken, ground beef or ground pork
  • green beans – make sure to use fresh trimmed green beans and not canned in this recipe
  • olive oil – I like to use a good olive oil to sauté the veggies.  Doesn’t have to be expensive, just make sure it’s cold-pressed and organic for the most flavor (in my opinion)
  • onion – this adds so much flavor and you can use a white or yellow onion (I also like to garnish with green onion or scallions)
  • garlic – you can use fresh chopped garlic or minced garlic from the jar

For the Sauce

  • soy sauce – I always use low-sodium soy sauce as I find that regular soy sauce can make dishes too salty. You could also swap the soy sauce with tamari or coconut aminos to make this gluten-free or paleo
  • chili garlic sauce – this adds flavor and a nice kick, you could also use sweet chili sauce or even sriracha
  • honey – this adds a little sweetness to the sauce without using refined sugars and makes a nice glaze.  You could also swap the honey with maple syrup if you don’t have honey on hand
  • sesame oil – adds that delicious Asian flavor to the sauce!
  • ginger – fresh ginger is definitely best in this dish, but if all you have is ground ginger you can use
  • seasonings – I used a combination of salt, pepper and crushed red pepper flakes for added spice

How to Make Asian Ground Turkey and Green Bean Stir Fry

  1. Sauté the green beans.  In a large skillet, heat olive oil over medium heat.  Once pan is hot, add green beans and season with a little salt and pepper.  Saute the green beans for about 6 minutes until they start to get a little char and are tender, but still crisp.  We don’t want floppy green beans!  Transfer the green beans to a bowl and set aside.
  2. Brown the ground turkey.  Drizzle a little more olive oil in the hot skillet and add the chopped onion.  Sauté the onion until fragrant and translucent, about 2 to 3 minutes.  Mix in the garlic and sauté for an additional 30 seconds, being careful not to burn.  Add the ground turkey and brown until crumbled and turkey is fully cooked.
  3. Make the sauce.  While the ground turkey is cooking in the skillet, in a small bowl or jar whisk together soy sauce, chili garlic sauce, honey, sesame oil, ginger and seasonings.
  4. Toss the stir fry!  Add the cooked green beans back into the pan and pour in the sauce, mixing well, making sure to completely coat the ground turkey and green beans.  Let everything simmer for about 2 more minutes, until sauce has thickened.  Serve over hot rice (or cauliflower rice to keep this low carb) and enjoy!

Perfect for Meal Prep!

Not only is this ground turkey recipe great for an easy meal during those busy weeknights, but this stir fry is perfect for meal prep too! I’ll make the stir fry in the skillet while my brown rice easily cooks right in my Instant Pot and everything is ready to go at the same time. Then I just divide everything up into containers and we have some delicious lunches to enjoy that week.  To keep this lower in carbs, feel free to serve with cauliflower rice!

This Asian ground beef and green bean stir fry will last up to 4 to 5 days in the fridge stored in a sealed, airtight container.  Trust me when I say, this meal tastes even better the next day!

Ingredients 

  • 2 tbsp olive oil, divided
  • 1 lb green beans, trimmed and chopped
  • Salt and pepper, to taste
  • 1 lb ground turkey
  • 1/2 cup onion, chopped
  • 3 cloves garlic, minced

For the Sauce:

  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 2 tsp chili garlic sauce
  • 1 tsp sesame oil
  • 1 tsp fresh ginger, grated
  • 1/4 tsp pepper
  • 1/4 tsp red pepper flakes

Instructions

    I did not have any chili garlic sauce, so I subbed in a bit of sriracha and I did not put red pepper flakes because we don’t like things spicy. That said, I usually find soy sauce’s flavorful and this didn’t taste seasoned at all. The sauce didn’t cling to the turkey or beans so it just tasted like we were eating turkey and green beans.

    I will try again with the chili garlic sauce, buy I also think maybe a thickening agent needs to be added.

    This was so simple and delicious. I picked it because I had freshly picked beans today. I added slivered almonds for some crunch and only had 1/8 cup of soy sauce so it was 1/8 cup soy sauce and 1/8 cup liquid aminos. 2 yr old approved of the flavor!
