When I knew I’d be sharing a recipe around Christmas, I wanted to make something super festive, but that was still somewhat healthy. I mean my blog is “Eat Yourself Skinny” after all, gingerbread cookies and peppermint bark wouldn’t exactly fall into that category. Umm lemme tell you…it is nearly impossible to find festive healthy recipes for the holidays.
Trust me…I looked.
So instead of doing a low calorie cookie recipe or any dessert for that matter, I decided to go with one of my favorite holiday fruit salads that taste amazing with almost anything!
Our family has this salad on the table every year during Christmas and the mixture of apple, orange and fennel tastes so delicious. You can even throw in some dried cranberries for a more festive look. I didn’t have any on hand at the time so I just left the recipe as is. The addition of lemon is essential not only to keep the apples from browning, but it really brings all the flavors together in this dish. This is also heart healthy and diabetic friendly! Hope you enjoy this as much as I did!
Love it Kelly! Fennel has been my new discovery in 2011. I posted a recipe for fennel, pear and pine nut salad a few months ago and I have made it more since then. Your recipe looks great as well! I may try it next time I have a bulb of fennel.
