When I knew I’d be sharing a recipe around Christmas, I wanted to make something super festive, but that was still somewhat healthy. I mean my blog is “Eat Yourself Skinny” after all, gingerbread cookies and peppermint bark wouldn’t exactly fall into that category. Umm lemme tell you…it is nearly impossible to find festive healthy recipes for the holidays.
Trust me…I looked.
So instead of doing a low calorie cookie recipe or any dessert for that matter, I decided to go with one of my favorite holiday fruit salads that taste amazing with almost anything!
Our family has this salad on the table every year during Christmas and the mixture of apple, orange and fennel tastes so delicious. You can even throw in some dried cranberries for a more festive look. I didn’t have any on hand at the time so I just left the recipe as is. The addition of lemon is essential not only to keep the apples from browning, but it really brings all the flavors together in this dish. This is also heart healthy and diabetic friendly! Apple, Orange and Fennel Salad
Recipe adapted from Better Homes and Gardens
Yield: 10 servings 1x
- 1 Tbsp fresh lemon juice
- 1 Tbsp apple cider vinegar
- 1 Tbsp olive oil
- 1 tsp. snipped fresh thyme
- 1/8 tsp. sea salt
- 1 medium apple, cored and chopped
- 1 medium orange, peeled, seeded, sectioned and chopped
- 1 small fennel bulb, trimmed, cored and chopped
- 1/4 cup chopped pecans, toasted
- In a medium bowl, whisk together lemon juice, vinegar, oil, the 1 teaspoon thyme, and salt.
- Stir in apple, orange and fennel. Cover and chill for 1 to 4 hours.
- Stir in pecans just before serving. If desired, garnish with additional snipped fresh thyme. Enjoy!
