Is it just me or is it HARD getting back into a healthy routine after the holidays?!  All those cookies, pies and, don’t even get me started on all that delicious candy from my stocking (yes my parents still give me one!)  Well all that indulging is definitely fun, but it can be a challenge transitioning back into healthy eating habits and normal meal prep routines come February.  I find it especially hard when wanting to entertain for a large crowd, yet still trying to keep the food healthy and wholesome.  These turkey pinwheels are perfect for a large gathering of people (or even your kiddos!) as they are hearty, packed with flavor and make for a much more health conscious choice than say cheesy dips or fried wings!

I was actually inspired to make these pinwheels from these incredible croissant sandwiches that were served to us in our bridal suite while we were getting ready for my wedding.  The sandwiches had this delicious creamy (and pink!) cranberry mayo layered with smoked turkey slices and crunchy veggies all on fluffy croissants.

I chose to make pinwheels because they make perfect little finger foods, are smaller portion sizes for healthier eating and well they just look really cute on the plate!  To make these lighter in calories in comparison to the fluffy croissant sandwiches previously mentioned above, I used whole grain tortillas with reduced-fat cream cheese instead of mayo.  Now here’s the fun part!  I made the most delicious sweet and spicy cranberry spread from my favorite cranberry salsa that I love to make during the holidays.  Simply combine the cream cheese with a cup of cranberry salsa, mix everything together and you’ve got yourself a delicious creamy spread that pairs perfectly with the smoked turkey breast!  Top with spinach, wrap tightly together and refrigerator until ready to slice then serve.

So easy, right?!

Not only do these pinwheels make perfect party appetizers, but they’re great for kids lunches too!  They are just the right size to fit into small baggies for lunch boxes and are way more fun than the usual sandwich they are used to getting.  If you are making these for kids, I would suggest omitting the jalapenos from the cranberry salsa as they are only added for a touch of spice, but not needed for the overall dish.  This cranberry salsa recipe DOES make about 3 whole cups of salsa so feel free to halve the recipe or enjoy all the extra deliciousness!

I will definitely use this cranberry spread on other sandwiches from here on out!  It adds such a sweet flavor which tastes perfect paired with the saltiness of the turkey slices and crisp spinach!

Can we say morning bagel anyone??

Turkey Pinwheels with Cranberry Spread

Healthy Turkey Pinwheels layered on a sweet and spicy cranberry spread with fresh spinach all wrapped together on a whole wheat tortilla!  Perfect for lunches or your kids will love them!

Ingredients

For the Cranberry Spread:

For the Pinwheels:

  • 2 large whole grain tortillas
  • 12 slices smoked turkey breast
  • 24 fresh spinach leaves, divided

Instructions

  1. To make the cranberry spread, mix the softened cream cheese with one cup of cranberry salsa and mix well until all combined. Cover and refrigerate until ready to use.
  2. To make the pinwheels, divide cream cheese mixture among 2 large tortillas and spread evenly all the way to the edge. Top with 10 to 12 fresh spinach leaves on each, pressing down slightly so that the leaves stick to the tortillas.
  3. Layer with about 6 turkey slices on each then begin tightly rolling the tortillas and wrapping with plastic wrap to keep them together.
  4. Refrigerate for about 1 to 2 hours so that the tortillas hold their shape, then gently cut the rolled tortillas into 1/2-inch slices. You should yield about 20 to 22 pinwheels total.
  5. Serve and enjoy!
