Is there anything better on a lazy Sunday morning than waking up and simply throwing your breakfast in the oven without any work or prep? That’s why I LOVE this Overnight Blueberry French Toast Casserole! Not only is this super easy to make, but it is also a much healthier alternative to typical french toast casseroles that are usually full of sugar and cream. Now don’t worry, there may be less fat and calories in this dish, but that doesn’t mean it lacks any flavor. It’s moist and sweet with chunks of warm blueberries in every single bite!

Ingredients You’ll Need
You only need a few simple ingredients to make this delicious french toast casserole and most you probably already have on hand in your pantry or fridge.
- bread – for breakfast casseroles like this, I always prefer using a crusty sourdough bread or french bread because it soaks up the egg mixture perfectly without getting too soggy or mushy when baking. You could also use a brioche or challah bread.
- egg whites – I wanted to use egg whites to cut some fat and calories to make this casserole a little lighter, but feel free to substitute the egg whites with 8 whole eggs.
- milk – feel free to use any type of milk you’d like for this. I always use whatever we have in our fridge which in this case was unsweetened almond milk and it tasted amazing!
- maple syrup – this sweetens everything up without using any refined sugar and tastes AMAZING in this casserole! Feel free to drizzle a little extra over top after it has baked.
- vanilla + spices – These are a MUST and add so much flavor and extra sweetness to this dish.
- blueberries – I used blueberries in this recipe, but feel free to use strawberries, raspberries, blackberries or a mixture of them.
Add in a scoop or two of your favorite protein powder into the egg mixture before pouring on top of the bread to add a boost of protein for a delicious pre or post-workout breakfast!
How to Make Blueberry French Toast Casserole
- Toast the bread. Preheat oven to 350 degrees F and slice your bread into 1-inch pieces. Place the bread cubes on a prepared baking sheet and bake in the oven for about 10 minutes, until slightly golden and firm.
- Whisk the egg mixture. In a large bowl, whisk together the egg whites, almond milk, maple syrup, vanilla, cinnamon, nutmeg and salt until all combined.
- Assemble the casserole. Transfer the toasted bread cubes to a casserole dish coated with nonstick spray and sprinkle blueberries all over top. Pour the egg mixture evenly over the bread, cover and place in fridge for at least an hour, but best overnight.
- Bake the casserole. Uncover the casserole and place in the oven at 350 degrees F for 45 to 50 minutes, until the casserole is set and the top is nice and golden. Top with powdered sugar or maple syrup and enjoy!
Prepping and Storage
To Prep: As I mentioned above, this recipe is designed to be prepped ahead of time! Mix everything together at night, cover and refrigerate overnight. In the morning, all you have to do is uncover the baking dish and bake!
To Store: Store any leftovers in an airtight container in the fridge for up to one week. Reheat leftovers either in the toaster oven or microwave until warm.
To Freeze: You can also freeze this casserole in an airtight container or freezer bag for up to 3 months.

Overnight Blueberry French Toast Casserole
Ingredients
- 1 (14-16 oz) loaf whole wheat french bread, cut into 1-inch cubes
- 2 cups liquid egg whites, or 8 whole eggs
- 2 cups unsweetened almond milk
- 1/4 cup pure maple syrup
- 1 Tbsp vanilla
- 2 tsp. cinnamon
- 1/4 tsp.nutmeg
- Pinch of salt
- 1 cup fresh or frozen blueberries
- Optional toppings: powdered sugar, maple syrup, extra blueberries
Instructions
- I like to either use day old bread or toast the bread cubes before using them in the casserole. To toast the bread cubes, preheat oven to 350 degrees F and place bread on prepared baking sheet. Bake in the oven for about 10 minutes then evenly spread bread in a 9×13 inch baking dish coated in nonstick spray.
- Sprinkle blueberries evenly over bread and set aside.
- In a large bowl, whisk together egg whites, almond milk, maple syrup, vanilla, cinnamon, nutmeg and salt. Pour mixture evenly over bread, cover and place in fridge for at least an hour, but best overnight.
- Preheat oven to 350 degrees F, uncover casserole and bake in the oven for 45 to 50 minutes. Top with powdered sugar or maple syrup, serve and enjoy!
