Ok sangria lovers, this one is for you!  *Immediately raising hand*

Is sangria not the perfect summer staple?!  I mean whether you’re having friends over, lounging by the pool or just having an outdoor party, sangria is always the hit of the crowd.  I can’t believe we’re already in August and fall will be upon us before we know it, but I wasn’t about to let the whole summer go by without sharing my favorite recipe!  The thing I love about sangria is that the longer it sits, the more flavor it has which makes prepping it for a party so easy!  Just throw everything into your pitcher a couple hours before and it’s ready to go!

And let’s talk about how refreshing it is!  There is truly nothing better than sipping on an ice cold glass of sangria on a hot day and all that (boozy) fresh fruit just makes it that much sweeter.  For this recipe I used my favorite bottle of Sauvignon Blanc, but you could use Pinot Grigio or even a bottle of Reisling or Moscato if you like your sangria super sweet.  Now this is already pretty sweet due to the pineapple juice and coconut rum so I highly suggest the first two wines!

Then I just mixed together a combination of pineapple, orange slices and limes, threw in some fresh mint and topped it all with ice!  Super easy, so refreshing and the perfect cocktail to end the summer if you ask me.  For the pineapple you could easily use fresh or frozen, but frozen pineapple cubes actually act as awesome ice cubes in this sangria and they are already pre-chopped so all you do is toss them in!  I am ALL about convenience so this was totally the way to go for me.

I actually made this sangria for our housewarming party we had last weekend and it was seriously such a huge hit!  I’ll be honest and admit that I am SO incredibly disappointed I didn’t take enough photos of the party (#bloggerfail), but I was just having too much fun!  And I mean hosting 70 some people is a lot of work sooo gimme a pass on this one 😉  It was a fiesta-themed taco bar complete with custom koozies, a drink station, and delicious tacos with all the fixings from our favorite local restaurant Zandra’s Taqueria owned by our good friends!  This pineapple sangria was the perfect addition to our party along with fresh margaritas so I was excited to share the recipe with you all!

But back to this sangria.  To top it all off and add a little bit of fizziness to the cocktail, I used La Croix lime flavored sparkling water, but you could use regular club soda or even Sprite Zero if you prefer!  I honestly don’t measure when making this recipe so it was hard to give you all exact measurements, but the great thing is you really can’t mess this up!  All the flavors taste so good together so add a little more of your favorite ingredients (or a little less of others) and just have fun making this sangria all your own!  Either way I think you’re friends will really love it and it’s definitely the perfect way to end the summer 🙂

Ingredients 

  • 2 cups fresh or frozen pineapple, cut into cubes
  • 1 orange, sliced
  • 2 limes, sliced
  • 2 1/2 cups fresh pineapple juice
  • 1 750 ml bottle white wine (I used Sauvignon Blanc)
  • 1/2 cup coconut rum
  • 2 cups lime flavored soda water, I used La Croix
  • Handful fresh mint, torn

Instructions 

  • Add fruit to a large pitcher and combine pineapple juice, wine, coconut rum and soda water.
  • Stir in torn mint leaves, add ice, serve and enjoy!
