Avocados and I have a love-hate relationship.

You see I really want to LOVE them because they are so incredibly good for you, but eating them on their own in all of their avocado glory just isn’t that appealing to me.  Avocados are one of those healthy fats that are full of vitamins, antioxidants and TONS of fiber.  They also just so happen to have more potassium than bananas (crazy right?) and their creamy texture makes them the perfect substitute for all sorts of ingredients in many of your favorite dishes.  Sooo I have been on a mission to incorporate these little fruits (yes FRUIT) into my diet as much as possible and have found some incredible recipes that taste so delicious you wouldn’t even believe that avocados were in them!  For example, avocados make the perfect substitute for oil or butter when baking, they add a whole new level of creaminess to smoothies and ice cream and I can pretty much guarantee you a life-changing experience upon trying chocolate and avocado together.

Avocados have such a light subtle flavor that when added to your favorite recipes you really can’t taste them!  Let’s also not overlook the clear and simple fact that they make the dish SO much healthier.  A win-win.

Now who said comfort food had to be unhealthy??
